- 1 pound shrimp, peeled and deveined
- 1 cup Alfredo sauce
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- Oil for frying
- Salt and pepper to taste
- In a bowl, mix the shrimp with salt, pepper, and Alfredo sauce. Set aside.
- Place a tortilla on a flat surface and spoon some of the shrimp mixture in the center.
- Sprinkle mozzarella cheese on top of the shrimp mixture.
- Fold the sides of the tortilla over the filling and roll it up tightly.
- Dip each burrito in the beaten eggs, then roll in breadcrumbs to coat.
- Heat oil in a deep pan over medium heat. Once hot, carefully place the burrito bites in the oil.
- Fry until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
- Serve warm with additional Alfredo sauce for dipping.
Notes
- For extra crispiness, double-fry for 1 minute before serving.
- You can also bake these at 375°F (190°C) for 15-20 minutes for a healthier alternative.
